Assuming bits were cut, I'd guess it was more action sequences, since you can often lose them without losing too much plot coherence.
I did wonder if we missed some more stuff between Madam Ching, Dan and Ying Wai since Ying's conversion from "I must get revenge" to "I want to work for you" very much happened in the background - you could sort of see it but an awful lot was left to the viewer to join the dots there.
Actually, thinking about it, I wonder if we lost a lot of the Madam Ching moments. She seemed strangely underused, but it wouldn't surprise me if she'd been written some good stuff but in a way that ultimately turned out to be tangential to the main story and so could be sacrificed.
