Love the R2D2 Instant Pot. I already have an Instant Pot, but really, really wanted to find an excuse to buy another one when I saw they had the R2D2 one a few months ago. I have refrained so far from getting another one as I really don't have a need for two though.
I find the excess liquid thing is an issue with them, I've often drained the liquid and reduced it down in a pan separately, but then that does rather take away from the convenience of it all. Otherwise if what I've cooked has potatoes in it, I sometimes mash a couple up to help thicken it.
The main thing with arrowroot is don't ever, ever let it boil or it will go thin again. You need to heat it just until it thickens, then take it off the heat straight away, or it will thin down again. It's weird stuff, but good as a thickener once you get the knack of it. Also good for really crisp biscuits.
